Greek Avocado Toast

INGREDIENTS
2 avocados, pits removed
1/2 a lemon
kosher salt
Freshly ground black pepper
pinch of crushed red pepper flakes
4 slices sourdough bread, toasted
1/2 c. crumbled feta
1/2 c. halved cherry tomatoes
1/2 cucumber, chopped
1/2 c. chopped kalamata olives
1/4 c. chopped dill
Extra-virgin olive oil, for drizzling (optional)

DIRECTIONS
Remove avocado halves from skin and place in a medium bowl.
Immediately squeeze some lemon juice over the avocado. Season avocado with salt and pepper and mash with a fork.
Taste for seasoning, adding more lemon juice if desired.
Spread mashed avocado onto toast then top with feta, cherry tomatoes, cucumber, kalamata olives, and dill. Drizzle with olive oil and serve.

Piña Colada Protein Smoothie

INGREDIENTS
1 can coconut milk
1 banana
2/3 c. frozen pineapple
1/3 c. Frozen Mango
1 scoop Protein powder
Pineapple wedge, for garnish

DIRECTIONS
Combine coconut milk, banana, pineapple, mango and protein powder in a blender and blend on high until smooth.
Garnish with a wedge of pineapple and serve.

Cauliflower Waffles

INGREDIENTS
FOR THE WAFFLES
3 c. cauliflower, grated
3 c. shredded mozzarella
1/2 c. finely shredded Parmesan
3 large eggs
1/4 c. cornstarch
1 tsp. paprika
kosher salt
Freshly ground black pepper

FOR BREAKFAST STYLE
1 fried egg
1 tbsp. fresh chopped chives
kosher salt
Freshly ground black pepper

FOR AVOCADO TOAST STYLE
1/2 avocado, mashed
Squeeze of lemon
Drizzle with extra-virgin olive oil
Flaky salt
chili flakes

FOR BLT STYLE
3 slices bacon
2 large slices tomato
1 piece lettuce
2 tsp. mayo
kosher salt
Freshly ground black pepper

DIRECTIONS
Preheat your waffle press.
In a large bowl, mix together cauliflower, cheeses, eggs, cornstarch, and paprika until combined. Season with salt and pepper.
Pour 1 cup batter into a preheated waffle press, and cook for 6 minutes.
Serve alone or with the toppings of your choice.

Breakfast Pops

INGREDIENTS
2 c. plain yogurt
1/2 c. whole milk
1 tbsp. honey
1/2 tsp. pure vanilla extract
1/2 c. strawberry jam
1/2 c. blueberry jam
1/2 c. chopped strawberries
1/2 c. blueberries
2 c. Honey Nut Cheerios

DIRECTIONS
In a medium bowl, stir together yogurt, milk, honey, and vanilla until fully combined.
Fill pop molds, alternating yogurt mixed with jam, fresh fruit and cereal, about 1/4 cup of each at a time.
Freeze for 6 hours or up to overnight.
Remove pops from freezer and let sit at room temperature for 5 minutes. Remove from molds and serve.

Cream Cheese Pancakes

INGREDIENTS
3 oz. cream cheese softened to room temperature
2 tbsp. sugar
3 large eggs
1 tsp. pure vanilla extract
pinch of kosher salt
Butter, for cooking
Sliced strawberries, for garnish
Powdered sugar, for garnish
Maple syrup, for drizzling

DIRECTIONS
Make batter: In a large bowl using a hand mixer, beat cream cheese and sugar until smooth. Add in eggs, vanilla, and salt and beat until combined.
In a large skillet over medium heat, heat butter. Pour about ¼ cup batter into the pan, then cook until golden, about 2 minutes. Flip and cook for one more minute.
Serve with strawberries and a dusting of powdered sugar. Drizzle with syrup, if desired.
