Sweet Potato Toast

Yes! It’s possible to toast sweet potatoes in the toaster.

INGREDIENTS

1 large sweet potato, rinsed and scrubbed clean

desired toppings (see below)

PB & J

peanut butter

berry jelly

granola

AVOTOAST

mashed avocado

red pepper flakes

Flaky sea salt

Squeeze of lime

FRIED EGG

fried egg

kosher salt

Freshly ground black pepper

Hot sauce

DIRECTIONS

Slice sweet potato lengthwise into 1/4″ thick slices.

Insert slices into the toaster (as you would bread) and toast on high. Check the sweet potatoes after it pops up from the toaster. (It’s ready when you can easily pierce a fork into the flesh, it’s ready.) Continue toasting until tender, if necessary. If the toast is darkening too quickly, turn down the toaster set to medium.

Top as desired and serve immediately.

Granola Cups

These crunchy granola cups let you eat your morning yogurt spoon-free.

INGREDIENTS

3 1/2 c. old-fashioned rolled oats

1/2 c. coconut flakes

1/3 c. chopped pistachios

1/4 c. extra-virgin olive oil

3 egg whites

2/3 c. honey, plus more for serving

Pinch of ground cinnamon

pinch of kosher salt

Greek yogurt, for serving

sliced strawberries, for serving

DIRECTIONS

Preheat oven to 350°. In a large mixing bowl, combine oats, coconut, pistachios, olive oil, egg whites, honey, cinnamon, and salt. Coat muffin cups with cooking spray. Press some of the granola mixtures into each muffin cup, forming a bowl shape. Bake until lightly golden around the edges, 12 to 14 minutes.

Refrigerate 20 minutes, then use a butter knife to gently remove each granola cup from the muffin tin. Top each one with Greek yogurt, a drizzle of honey, and sliced strawberries.

 

Avocado Cauliflower Toast

You’re going to want to replace all toast with this delicious, carb-free cauliflower version.

INGREDIENTS

1/2 head cauliflower

3 eggs, divided

kosher salt

extra-virgin olive oil

1 avocado, peeled and pitted

Juice of 1 lemon

pinch red chili flakes

DIRECTIONS

Grate cauliflower on a box grater. Transfer to a large bowl and mix with 1 egg and a large pinch of salt.

In a large skillet over medium heat, heat olive oil. Add 2 big scoops of cauliflower mixture to pan and shape into a round patty. Repeat to make a second patty. Let cook until golden brown, about 5 minutes, then carefully flip. Cook 3 more minutes. Transfer to a plate.

In the same skillet, fry remaining 2 eggs and set aside.

In a small bowl, mash avocado with lemon juice. Season with salt. Spread on top of cauliflower “toast.” Sprinkle with red chili flakes. Top each with a fried egg. Serve immediately.

 

Greek Yogurt Pancakes

No baking powder? You could use baking soda instead; it will react with the acid in the Greek yogurt, leaving the pancakes just as light and fluffy. Only use 2 teaspoons though—it’s more powerful than baking powder!

INGREDIENTS

1 c. flour

1 tbsp. baking powder

2 eggs

1 2/3 c. Greek yogurt

DIRECTIONS

Combine the flour and baking powder in a large mixing bowl. In a separate bowl, stir the eggs and Greek yogurt, then fold it into the flour and baking powder mixture, forming a thick batter.

Pour batter onto a sauté pan and cook over medium-low heat, using a silicone spatula or spoon to smooth out the batter into a 1/4-inch thick pancake shape (since the batter won’t spread easily on its own). Look for the edge of the pancake to start to round out, forming a lip that you can easily slide a spatula under, after about 1-2 minutes of cooking. Lift the corner of the pancake, and if the bottom is lightly golden, slide the spatula all the way under and flip the pancake.

Cook until both sides are lightly golden. Repeat until you’ve used all of the batters.

Serve pancakes warm with syrup drizzled on top.

 

Breakfast Banana Splits

INGREDIENTS

1 banana, split lengthwise

1 c. vanilla yogurt

1/4 blueberries

1/4 chopped strawberries

2-4 tbsp. granola

Honey, for drizzling

DIRECTIONS

Place banana slices in a long narrow serving dish. Scoop yogurt on top. Drizzle with honey and top with blueberries, strawberries, and granola. Serve immediately.
