A traditional Indian recipe of Atte Ka Halwa for this Ramadan

This one is a wholesome traditional Indian dessert made from whole wheat flour. It’s easy to cook and the sweet melts into the mouth once you put it. A regular dish in the Indian households during Puja and Navarathri lets check out this predominantly North Indian dish in our Kerala kitchens especially on this holy month of Ramadan. The following recipe serves 2 and total cook time will be 45 minutes. The preparation is by Chef Ashish Srivastava of Regenta LP Vilas.

Ingredients
1.Whole wheat flour-500gm
2.Ghee-300gm
3.Sugar-500gm
4.Water-100Ml
5.Raisins-50gm
6.Cardamom(coarsely ground)-5gm
7.Almonds(sliced)-10gm
8.Pistachios(for garnishing, sliced)-5gm

How to Make?
In the medium-high heat, boil the water and the sugar in a pan. After bringing the syrup to full boil, mix it well making the sugar completely dissolved and turn off the heat. Set the syrup aside. In a frying pan, add clarified butter and after the butter melts add the whole wheat flour. Keep stirring, roast the flour until it turns light brown and gives out a sweet aroma. Make sure that the flour is roasted well and after adding the syrup flour will be lighter in shade. The halwa should be nice and light brown in colour and the preparation takes about 7-8 minutes. In order to minimize splattering, add the syrup slowly. Keep stirring and do not form lumps. Then after the flour attains right texture, add to it raisins, half the almonds and cardamom, and cook till it becomes the consistency of thick batter. The consistency of halwa should be kept softer than your desired consistency because it will thicken over time. This will take about 5-6 minutes.
After the preparation is over, garnish the halwa with almonds and pistachios. Serve Warm. Ramadan Kareem.
