Easy recipe for Semolina cake for this Ramadan

Semolina Cake or Basbousa is actually a traditional Middle Eastern sweet cake made from semolina or farina soaked in simple syrup. Sometimes coconut is also added to this tasty pastry. Instead of simple syrup, orange flower water or rose water may be used. Total cooking time for this will be 1 hour and the following recipe is enough for 9-12 people.

Ingredients(cake)
1.Semolina flour – 1 cup
2.Yogurt- 1 cup
3.Sugar-1 cup
4.Butter-1 cup
5.Baking Powder-2 tbsp
6.Eggs(beaten)-2

Syrup
1.Sugar- 3 cups
2.Water-1 cup
3.Vanilla-1 teaspoon
4.Lemon- 1/2
5.Cinnamon stick-1

How to make?

First, we should prepare the cake. For that preheat the oven to 350. Make a mixture of flour, sugar, and baking powder in a large bowl. Melt butter and add to the mixture. Then add yoghurt to it and mix it well. To this add the eggs and mix well again. Beat the mixture for 2 minutes without the formation of lumps. Now Pour this cake mix into 9X13 inch baking pan brushed with very little oil. Bake in the middle rack of oven for 45 minutes. Let the cake be prepared, now its time to prepare the syrup.

The Syrup
Take a pot, mix 3 cups sugar and 1 cup water in it and put on a stove on high heat. To it add vanilla and cinnamon stick and stir well. squeeze half lemon into the mixture, drop the lemon itself in there after squeezing. Mix well, let it boil for 1 minute and after that remove from heat. Now, let’s attend to the cake in the oven. After about 45 minutes, the cake will be in golden colour, then remove it from oven and keep it to cool for 5 minutes.

Pour the syrup into the whole cake and let it cool. After some time, cut the cake into pieces and enjoy. Ramadan Kareem.
