Recipe of Savory Kilikoodu for this Ramadan

Kilikoodu(Bird’s Nest) enjoys the position of a much sought after item during the time of Ramadan in Malabar. This wholesome dish is filled with the goodness of mashed potatoes, carrots and onion with the spicy flavour of pepper, coriander and garam masala. The coating of crunchy breadcrumbs and vermicelli makes it a fried delight and a perfect snack to be enjoyed with the family. The following recipe is by chef Jerson Fernandes and its enough to serve 2. Total cooking time will be 45 minutes.

Ingredients
1.Potato – 250gm
2.Carrots(chopped)-100gm
3.Green chillies- 3
4.Ginger Garlic paste- 1 tbsp
5.Turmeric powder-1/4 tbsp
6.Red chilly powder-1/4 tbsp
7.Pepper powder- 1/4 tbsp
8.Garam Masala powder- 1/4 tbsp
9.Vermicelli – 50gm
10.Salt(to taste)

How to make?

Boil potato for 5 minutes till it’s cooked well. After that smash it and keep aside. Heat some oil in a pan and in it cook chopped carrot, chopped onion, green chilly and ginger garlic paste for 2 minutes. Now add to it red chilly powder, turmeric powder, pepper powder and garam masala powder. Mix everything well over low flame for 2 minutes. After that switch off the heat. Now using this potato mixture make balls and roll out each ball into an oval shape. Dip each roll in beaten egg and roll in broken vermicelli. Heat oil in a pan and fry till the colour becomes brown. You may enjoy it with tomato ketchup or chilli sauce according to your taste.
