Tricolor Halwa to Serve This Independence Day

Gajar Ka Halwa

Gajar Ka Halwa

Ingredients

  • 500 grams Carrots (Gajjar), washed and peeled (preferably red)
  • 1/4 cup Ghee
  • 400 ml Milk
  • 150 grams Khoya (Mawa), grated
  • 200 grams Sugar
  • 1 teaspoon Cardamom (Elaichi) Powder
  • 2 tablespoons Ghee
  • 1/4 cup Mixed dry fruits, sliced (almonds cashew nuts pistachios)

How to make Gajar Ka Halwa

  • To begin making the Gajar Halwa with Khoya, grate the washed and peeled carrots.
  • Heat a pressure cooker on medium flame, add ghee and grated carrots and saute for a couple of minutes. Sprinkle a little water and close the pressure cooker.
  • Pressure cook the carrots for 1 whistle and turn off the flame. Allow the pressure to release naturally.
  • In the meanwhile, heat a kadai on medium flame, add milk and allow it to come to a rolling boil, turn down the heat and let the milk reduce to 3/4th its quantity.
  • Once the milk has reduced and thickened, add the grated khoya, elaichi powder, and sugar.
  • Allow the khoya and sugar to melt and the whole milk mixture to come together. Now reduce the flame and transfer the cooked carrots into the milk.
  • Continuously stir the milk and carrot mix, until you get a thick gajar halwa.
  • Adjust sugar and elaichi according to your taste and add two more tablespoons of ghee and give the gajar halwa one final stir.
  • Garnish the Gajar Halwa with dry fruits.

Microwave Oats Milk Halwa

Ingredients

  • 1 cup Oats
  • 2 cups Water
  • 1/3 cup Sugar
  • ½ tbsp Cardamom
  • 5 tbsp Pistachios
  • 2 tsp Ghee

How to make Microwave Oats Milk Halwa

  • Let’s prepare the oats milk by adding oats and water in a mixer.
  • Blend well until there are not pieces of oats are left and they become a smooth texture.
  • Take thin muslin cloth or thin cotton cloth and pour the mix.
  • Squeeze well and get the liquid in a bowl. You must not have more than 2 or 3 tsp of oats in the cloth. 1.5 cups of oats milk is ready.
  • For the halwa preparation, Take a microwave-safe bowl and brush it with ghee
  • Add ghee and the Pistachios. Mix well and microwave for 1 minute.
  • Take out and add oats milk, sugar, cardamom and mix well.
  • Microwave high for 4 minutes in total. Take out in between after every 2 minutes and stir well. Check if the sugar levels are fine for your taste buds at the end of 2 minutes and adjust accordingly.
  • Take out and add a tsp of ghee on top to get a better flavor.
  • Oats Milk Halwa is ready.

Tip:

  • Time depends on the quantity and size of the container. It is good to use a thick glass microwave safe bowl for this recipe as we are frying the nuts in it directly.

Ingredients

  • 1 cup Fresh green chickpeas, pureed
  • 1 cup Sugar
  • 1/4 cup Ghee
  • 2 Cardamom (Elaichi) Pods/Seeds, finely powdered
  • For garnish
  • 1 teaspoon Ghee
  • 6 Pistachios, chopped
  • 10 Raisins

How to make Hare Chane Ka Halwa

  • To begin making the Rajasthani Hare Chane Ka Halwa recipe, heat a heavy bottom kadai/pan with ghee.
  • Add the ground choliya mixture and keep stirring over low flame for 7-8 minutes or till the time they are cooked.
  • Now add sugar and cardamom powder and continue to keep stirring till the time all the extra moisture is absorbed and the halwa becomes non-sticky and forms a single lump.
  • Switch off. Heat ghee in a small pan and add the dry fruits for garnish and fry till fragrant and pour it over the halwa and mix well.
  • Delicious Rajasthani Choliya Halwa is ready to be served.
