After that delicious Mambazha Pulissery let’s make this delicious Kootu Curry.

The word kootu means ‘a mix or combination’, and the recipe is a mix of different vegetables and chickpeas simmered in a coconut cumin gravy, and later topped with browned/fried coconut.

Ingredients

  • Bengal gram – 200gms
  • Chick peas (cooked) – 100gms
  • Yam – 250gms
  • Raw Plantain – 250gms
  • Carrot – 2nos
  • Green chili – 6nos
  • Jaggery – 1no
  • Coconut – 1no
  • Pepper – ½ tsp
  • Cumin – ¼ tsp
  • Dry red chili – 3nos
  • Curry leaves
  • Oil
  • Salt

Preparation

  • Grate half portion of the coconut and crush it together with pepper, cumin, green chili.
  • Cut the yam, raw plantain and carrot into square pieces. To this add half cooked black peas, Bengal gram and cook by adding chili powder, turmeric powder, green chili and salt together with water.
  • When cooked add jaggery and the crushed items to this and boil. Once it is cooked and water is evaporated, remove from flame.
  • Splutter mustard. Add dry red chili and curry leaves to this. Mix it with the cooked curry.
  • Now in a heavy bottomed pan, heat oil and add grated coconut to it. Stir continuously until it turns brown.
  • Add the curry to this and mix well.
  • Kootu curry is ready to serve.
