**Ingredients**
– 2 big sweet potatoes
– ΒΌ cup grated coconut
– 3 shallots
– 3 bird eye chillies
– 3 tsp chilli flakes
– 1 tbsp coconut oil
– 2 tsp mustard seeds
– 2 bunches of curry leaves

**Preparation**
1. Begin by cleaning the sweet potatoes and cutting them into square chunks, leaving the skin on.
2. Steam the sweet potato pieces for 10-15 minutes.
3. Once they have cooled, peel the skin off and cut them into smaller pieces.
4. In a mixer, crush the grated coconut along with shallots, bird eye chillies, and salt.
5. Heat coconut oil in a pan and splutter the mustard seeds.
6. Add the chili flakes and curry leaves.
7. Once they become fragrant, introduce the crushed coconut mixture.
8. Stir for 2 to 3 minutes to roast everything thoroughly.
9. Now, add the cooked sweet potato and mix it well.
10. Cook for an additional 2 to 3 minutes with the lid on.
11. Give the dish a good mix before serving it hot.

For the bird eye chutney, you can easily prepare it by grinding 8 bird eye chillies, 5 shallots, 1 teaspoon of vinegar, 3 teaspoons of coconut oil, and salt in a mixer. Enjoy this flavorful dish as a part of your daily meals.
