– 1 tablespoon Ghee (clarified butter)
– 1/2 teaspoon Cumin Seeds
– 1/2 teaspoon Black Pepper Powder
– Salt to taste
– Water for kneading
– Oil for deep frying
Instructions:
1. In a mixing bowl, combine the all-purpose flour, rice flour, ghee, cumin seeds, black pepper powder, and salt.
2. Gradually add water and knead the mixture into a smooth, firm dough. The consistency should be tight, similar to that of poori dough.
3. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
4. Heat oil in a deep frying pan over medium heat.
5. Take small portions of the dough and roll them into thin discs on a floured surface. The thinner, the better.
6. Prick the rolled discs with a fork to prevent them from puffing up during frying.
7. Carefully place the rolled varkey into the hot oil and fry until they turn golden brown and crisp.
8. Remove the varkeys from the oil and place them on absorbent paper to drain excess oil.
9. Repeat the process with the remaining dough.
10. Once the varkeys cool down, store them in an airtight container.
