Here’s a simple recipe for Coriander Pepper Rice:

Ingredients:
1. 1 cup of basmati rice
2. 2 cups of water
3. 1 tablespoon of oil or ghee
4. 1 teaspoon of cumin seeds
5. 1 teaspoon of black peppercorns
6. 1 teaspoon of coriander seeds
7. 1/2 teaspoon of turmeric powder
8. Salt to taste
9. Fresh coriander leaves for garnish

Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
2. In a dry skillet, toast the cumin seeds, black peppercorns, and coriander seeds over medium heat until fragrant, about 2-3 minutes. Remove from heat and let them cool slightly.
3. Grind the toasted spices into a coarse powder using a mortar and pestle or a spice grinder.
4. In a medium-sized pot, heat the oil or ghee over medium heat. Add the ground spice mixture and turmeric powder. Saute for a minute until fragrant.
5. Add the rinsed basmati rice to the pot and stir to coat the rice with the spices.
6. Pour in the water and add salt to taste. Bring the mixture to a boil.
7. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 15-20 minutes or until all the water is absorbed and the rice is cooked through.
8. Once cooked, fluff the rice with a fork and garnish with fresh coriander leaves before serving.
