Loaded Cauliflower Breakfast Bake

TOTAL TIME: 0:55

SERVES: 6

INGREDIENTS

1 large head cauliflower

8 slices bacon, chopped

10 large eggs

1 c. whole milk

2 cloves garlic, minced

2 tsp. paprika

kosher salt

Freshly ground black pepper

2 c. shredded Cheddar

2 green onions, thinly sliced, plus more for garnish

Hot sauce, for serving

DIRECTIONS

Preheat oven to 350º. Grate cauliflower head on a box grater and transfer to a baking dish.

In a large skillet over medium heat, cook bacon. Transfer to a paper towel-lined plate to drain fat.

In a large bowl, whisk together eggs, milk, garlic, and paprika and season with salt and pepper.

Top cauliflower with cheddar, cooked bacon, and green onions, and pour over egg mixture.

Bake until eggs are set and top is golden, 35 to 40 minutes.

Garnish with more hot sauce and green onions and serve.

 

Cauliflower Breakfast Pizza

TOTAL TIME: 0:55

SERVES: 4

INGREDIENTS

1 large head cauliflower

8 large eggs, divided

1 c. shredded white Cheddar

2 cloves garlic, minced

1 tsp. paprika

kosher salt

Freshly ground black pepper

1 tbsp. extra-virgin olive oil

1 large onion

2 red bell peppers, chopped

1 c. ham

1 1/2 c. Shredded Monterey Jack

Freshly chopped chives, for garnish

DIRECTIONS

Preheat oven to 425º and line a baking sheet with parchment. Grate cauliflower on small side of box grater to form fine crumbs. Transfer to a large bowl.

To bowl add 2 eggs, white cheddar, garlic, and paprika and season with salt and pepper. Stir until combined.

Transfer dough to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.

Meanwhile, in a large skillet over medium heat, heat oil. Add onion and peppers and cook until soft, 8 minutes. Stir in ham. In a small bowl, whisk together remaining 6 eggs and season with salt and pepper. Pour eggs into skillet and scramble, 3 minutes.

Remove cauliflower crust from oven and heat broiler. Spread a thin layer of salsa on top. Top with scrambled eggs and Monterey jack.

Broil until cheese is golden, 2 minutes.

Garnish with chives and serve.

 

Bunless Bacon, Egg & Cheese

TOTAL TIME: 0:10

PREP: 0:10

LEVEL: EASY

YIELD: 1

INGREDIENTS

2 eggs

2 tbsp. water

1/2 avocado, lightly mashed

2 slices cooked bacon

1/4 c. shredded Cheddar cheese

DIRECTIONS

In a medium nonstick pan, place two mason jar lids (centers removed). Spray the entire pan with cooking spray and heat over medium heat. Crack eggs into the centers of the lids and lightly whisk with a fork to break up yolk.

Pour water around the lids and cover the pan. Cook, letting the eggs steam, until the whites are cooked through, about 3 minutes. Remove lid and top one eggs with cheddar. Cook until the cheese is slightly melty, about 1 minute more.

Invert the egg bun without the cheese onto the plate. Top with mashed avocado and cooked bacon. Top with the cheesy egg bun, cheese side-down. Eat with fork and knife.

 

Pepper Egg-In-A-Hole

LEVEL: EASY

SERVES: 4

INGREDIENTS

4 bell peppers (assorted colors), tops and seeds removed

1 c. shredded Cheddar

4 slices bacon, cooked and chopped

kosher salt

Freshly ground black pepper

4 large eggs

Freshly chopped parsley, for garnish

DIRECTIONS

Preheat oven to 400º. In each bell pepper half, add cheddar and cooked bacon. Crack an egg on top and season with salt and pepper.

Bake until whites are cooked and yolks slightly runny, 20 to 25 minutes.

Garnish with parsley.

 

Cauliflower Breakfast Muffins

TOTAL TIME: 0:45

LEVEL: EASY

SERVES: 12

INGREDIENTS

1 large cauliflower (or about 3 cups riced cauliflower)

6 oz. diced ham

1/2 c. baby spinach

1/2 c. finely chopped onion

5 Eggs, beaten

1/2 tsp. garlic powder

1 c. shredded Cheddar

kosher salt

Pinch cayenne pepper

Freshly ground black pepper

DIRECTIONS

Preheat oven to 375 degrees F. On a box grater or in a food processor, grate cauliflower and transfer to a large bowl. Place cauliflower in paper towels or cheesecloth and wring out any excess water.

Add eggs, cheddar cheese, garlic powder and whisk until combined. Fold in cheddar cheese, ham, spinach and onion. Grease a muffin tin with cooking spray, then fill each one about two-thirds full. Bake for about 20-25 minutes, or until lightly golden.
