Pudina Idli Recipe is a lovely flavor idli recipe. Idli batter is flavored with the popular green chutney made with coriander and mint leaves.

How to make

  • To begin making the Pudina Idli Recipe, our two main elements need to be kept ready.
  • Firstly, the idli batter. you can use the store bought batter, or make your own batter
  • Second, the Green Chutney. You can make it by combining 1 cup coriander leaves, 1 cup mint leaves, ½ cup curry leaves, ¼ cup peanuts or almonds, 1 teaspoon ginger, 2 green chillies, 1 teaspoon sugar, 2 tablespoon lemon juice and salt, and grind to a smooth paste in a blender, adding very little water. The addition of lemon juice enhances the flavors of mint and coriander and prevents discoloration of the greens.
  • Getting ahead to make the Pudina Idli, in a mixing bowl, combine the idli batter along with the green chutney vigorously, until the entire batter looks completely green in color.
  • Preheat an idli steamer with water, grease the idli plates generously with oil or ghee.
  • Pour a ladle full of batter into each of the cavities, place the plates in the steamer and steam for 10-12 minutes.
  • Insert a greased knife after 12 minutes to check if the idlis are steamed. If the knife comes out clean, turn off the flame and remove the idli plates from the steamer.
  • Now, wait for a couple of minutes, before you demould them.
  • Drizzle with some ghee and serve piping hot.
  • Serve Pudina Idli along with a chutney of your choice and your preferred morning beverage.
