Mixed Vegetable Paratha Recipe for this Ramadan

Mixed Vegetable Paratha is a healthy mix of veggies and grains. This traditional Indian bread is delicious and made with fresh vegetables and whole wheat flour. The serving is for 5 people and the total cooking time will be 30 minutes.

Ingredients

1.Whole Wheat flour dough- 1kg
2.Ghee- to shallow fry

For Masala filling

1.Rock salt – 1tsp
2.Red chilly powder- 1tsp
3.Garam Masala-1tsp
4.Roasted cumin-a pinch
5.Asafoetida-a pinch

For Papad Parantha

1.Urad Dal Papad(mashed), fried- 1/2

For Mixed Parantha
1.Cottage Cheese(grated)-1 tbsp
2.Radish(grated)- 1tbsp
3.Carrot(grated)-1tbsp
4.Cauliflower(sauteed with turmeric)(grated)- 1tbsp
5.Papad(mashed)(fired)-1tbsp

How to make

Like you make for chapathy, make small round portions from the dough. Roll that rounds into the shape of a Parantha and grease a little with ghee and sprinkle the masala. Now place the stuffing in the centre and fold. Roll it again and shallow fry on high flame while turning it on a griddle. Once done, you can serve it with potato curry, tomato curry, chicken curry etc.
